Wednesday Woes Meet Baking Bliss

Wednesdays have never been a good day for me, despite meaning I'm halfway to the weekend. My first semester of college included eight hours of class every Wednesday. Now? I work to jobs, back to back. And for some reason, York County has fallen in love with eating out on Wednesday evenings - at the Blue Heron, of course. So, today was jammed pack full of "How to be a Ballerina" video tapes and almost forty hungry patrons in four short hours. But, I also believe in taking your Wednesdays by the horns and showing them who's boss... by baking muffins. (Banana bread muffins, to be exact.)


Maybe you love Wednesdays. I guarantee though that sooner or later, you're going to run across that day that you simply can't stand. And when you do? Well. Here's a little advice.

Step 1. 
Find some helpers. Helpers are best found in cute little kids under the age of five. Often times, boyfriends, friends or just some great music will do.


Step 2.
Have the following "tools" handy...
  • A small bowl for melting better
  • 3 medium/large sized bowls
  • 2 small/medium sized bowls (1 for topping and 1 for the glaze)
  • A spatula or large wooden spoon for each helper
  • Measuring spoons
  • Muffin Pan
  • PAM Spray (or any kind of cooking spray, really) 
  • OR Muffin Papers


Step 3.
You will need the following ingredients - all of which are readily available in the typical kitchen.. except for maybe the overly ripe bananas but hey, luck always seem to have it that the bananas are too ripe when I'm having a bad day:


For the Batter [Italicized ingredients are optional!]
  • 2 Cups of All-Purpose Flour (Preferably whole wheat, let's be healthy folks. And while we're being healthy, I strongly suggest replacing 1/4 cup of flour with 1/4 cup of whole wheat bran.)
  • 1 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt (We use sea salt.)
  • 1/2 Cup Butter or Margarine (I Can't Believe It's Not Butter works perfectly.)
  • 3/4 Cup Brown Sugar (For the sugar conscious, Splenda's Brown Sugar Blend is a miracle.)
  • 2 Eggs
  • 4 Overly Ripe Bananas
  • 1/2 Teaspoon (ish) of Cinnamon
  • 1/4 Teaspoon (ish) of Ginger
  • 1/2 Teaspoon (ish) of Nutmeg
  • 1 Teaspoon of Vanilla
For the Crumble Topping: optional but reocommended - yumm!
  • 2 Tablespoons of Flour
  • 1 Tablespoon of Melted Butter
  • 1/3 Cup Packed Brown Sugar
  • Cinnamon - to taste
For the Glaze:
  • 1 Tablespoon of Butter or Margarine, Softened
  • 1 Cup of Powdered Sugar
  • 1 Teaspoon of Vanilla Extract
  • 1 Tablespoon of Milk (We used 1%)
  • Cinnamon to taste 
    Once you have made sure that you have all the appropriate ingredients, I suggest just pulling them all out of their respective fridge spots/cabinets and lining them up on the table.. Especially since most ingredients are used more than once. Once you've got that all settled, pull up stools for your helpers and preheat the oven to 325 degrees. 

    Yes, we know it's April. Yes, we still have Christmas themed place mats.
    For the Batter:

    Take the largest bowl you have and combine the following ingredients: 
            Flour, Bran (optional), Baking Soda and Salt. 

    At this point, take a small bowl and soften your butter. When it comes out of the microwave (after about 45 seconds), combine the brown sugar and cream it until well mixed. Chances are, your helpers will want to stick their little fingers in for a taste - let the butter cool for a moment first!

    In the meantime, you will need to mash your bananas in the third bowl. For squeemish fingers, you can use a potato masher. Otherwise? Your hands work just fine. Unfortunately, our bananas had been in the fridge so this was an awfully cold endeavor.

    After mixing the butter and brown sugar - add in the banana mixture, and two eggs. Stir until well blended.

    At this point, you may add optional ingredients. We added vanilla, cinnamon, nutmeg and ginger to taste. The measurements given above were just approximate. Taste the batter and add the flavors that you like best. You can always add mini chocolate chips or nuts, too! 

    Then, slowly add the flour mixture into your banana mixture. Be very careful when mixing. Over mixing the batter will lead to dry muffins. Need I say more?

    You will then want to take a moment to either spray your muffin pan with cooking spray or to line it with muffin papers - we chose the cooking spray method. This recipe will yield a dozen regular sized muffins. If you want to make jumbo muffins, regular bread or mini-muffins, simply change your pan and your cooking time. 

    Fill each muffin tin approximately 3/4 of the way full.


    If you want a crispy crumble topping...

    Mix together the brown sugar, flour and cinammon - using the amounts shown above.

    You will want to melt your tablespoon of butter by placing it in a small bowl and microwaving for about 20 - 30 seconds. After it comes out of the microwave, pour the melted butter into the flour mixture.

    Mix everything together until it is coarse. Take the coarse mixture and sprinkle it over the tops of your muffins.

    Now the muffins are ready for the oven! We found that standard size muffins needed to bake for approximately 20 - 25 minutes but, pop in a toothpick once they're brown on top - just to make sure!

    While the muffins are in the oven, you can get the powdered sugar glaze ready by simply combining all of the ingredients listed above!


    When the muffins come out of the oven, let them sit in the pan for a few minutes; then, flip them out and onto a wire rack if you have one (if not, the countertop will work too)! I highly recommend covering either surface in wax paper or plastic wrap as adding the glaze can get kind of messy.


    Once the muffins have cooled, drizzle the glaze over the tops with a spoon. Wait to eat the muffins until the glaze has set and hardened or your bound to have a big mess.

    And, finally, after all of that - take time to pour a big glass of milk, sit down, and eat a muffin.
    The dishes can wait.



    And if that isn't enough to brighten your day? Well, a little bird told me that it's starting to feel like spring out there.

Not so much an obligation to say "Dear God" so many times a day, but rather a way of life. Continually living present and grateful and open. I like this idea of prayer because it is accessible to anyone, regardless of beliefs. It is mysterious and purposeful and doesn't leave me wondering why some prayers are answered, and some are not. And because it provides valid justification for name tags in my trees. 


    And so I pray. In my head, in my writing, in my pictures, and hopefully, in my way of life. "

    Six.


    Six years ago (well, five years, three-hundred and sixty-four days, really), I was given a baby brother, a best friend and the funniest kid I've ever had the chance to meet. On April 5th, 2005 (while I was eating a just-delivered pizza in the hallway), Aiden Missouri Lake was born. Today, he turns six years old. Six years is somewhere between such a short time and such a long term but looking at how quickly Aiden's grown, it seems like it must have been shorter than I thought.
    So much has changed in six years (and not just digital photo quality). Aiden's grown from onsies to size 5 camoflauge pants. From binkies and hippopotomus print blankets to toy army men and playing battleship. His nickname's changed from "little it" to "aiders" to "taider-tot". Every year has been different.


    First, it was trains. Aiden and I would watch every Thomas the Tank Engine DVD we could find. It'd be torture to pull him from the model train table at Toys R Us. (Yet, he never played with the one I bought and assembled for him throughout the night for Christmas) Then, firetrucks. lae'd go to the grocery store in a coat and boots. Ladder 49 played on repeat. He'd climb to the window sill at the sound of every siren. Now? Well. It's army. It's torture. I love him anyway.

    As for the last year? Well, let me tell you about it.


    This year, Aiden fell in love with the Backstreet Boys. It's all he will listen to in the car. He knows every word, sings along and has choreographed dances, too. In July, we will both be going to our first BSB concert - together.


    Aiden is also an avid Beatles fan. Not only does he have two Beatles t-shirts of his own, but he often wears mine. He thinks nothing is funnier than the fact that he can wear my t-shirts. In fact, tonight we were going through his clothes and he says "Jen, it's so funny that I can wear your shirts. We're like the same size clothes but different size bodies. Just don't try to wear my underwear." Wise kid.


    All I wanted this night was a picture of Aiden and I together. I stretched my arms and tried, but everytime the shutter clicked - he drank his hot chocolate. After picking on him about it for a half an hour, he started acting silly and tried to climb underneath my camera. It's one of my favorite pictures of him - ever. 
    Out of focus but it captures Aiden, perfectly.




    Aiden is very conscientious about his hair style. Every morning he combs it into place with a little bit of gel. Somedays it's different than others. A few months ago, he insisted on this terrible bowl cut and has loved it ever since.



    He's an incredible writer, and now reader, too. I love seeing him spell words, read my blog over my shoulder and write fairy tales. What I don't love? His incessant need to read every road sign we pass. "Speed Limit 35" "Bridge May Be Slippery" "JEN! The sign said Speed Limit 35 and you have to be going like 37 right now." Thank you, Aiden.


    In the picture to the right, Aiden is painting christmas ornaments for Kasey. I love that Aiden has taken such an interest in the fight against pediatric cancer, in Kasey, in THON and in simply helping others. Tonight he asked me how he can donate his old books to kids who need them. He also collects change for THON and is always making fun things for me to take to Kase. Kids helping kids; it's a great thing.



    There are few things more precious than puppies. Aiden with puppies? That's one of them. He's so good with the little guys and constantly checks up on the puppies who have since gone to new owners. He also makes sure the dogs are fed and watered - more responsibility than I have with pets, perhaps. 


    When he grows up, Aiden plans to be an engineer and maybe a Penn Stater, too. He draws blueprints every day of hotel cruise ships, Army baracks, a tenative backyard bunker and anything else he can think of. Sometimes, he assembles his ideas with blocks and tests their stability in earthquakes and bomb scenarios... He's only six, I swear.


    Hey Aiden, thanks for not pelting my camera with that snowball you had rolled that day.


    The other day, Aiden dropped something on the floor and yelled "DAMN!" at the top of his lungs. He immediately turned around, rolled his eyes at me and said "I meant like the beaver" before walking away.


    Despite Aiden's claims that his big brother is mean, rotten or just plain dumb - I love seeing them together. Aiden is a mini-Sean and always has been.. probably always will be. Brotherly love is its finest between them, especially this past winter.

     

    This is Aiden's "AW C'mon" face, its a classic. Trust me, it was preceeded with a vocalized "aw, c'mon" - one of Aiden's many catchphrases.


    As much as I whine about dragging Aiden everywhere with me, taking him to school each day or about him stealing my iPhone - I could never get tired of that face.





    So, to sum it all. Happy Birthday to my favorite little boy in the world. Thanks for all the laughs, smiles, temper-tantrums and silly moments this year. I can't wait to spend a million more with you (give or take a few). I hope that your sixth birthday brings you Netflix and building blocks, brownie treats and a fabulous day. I hear that being six is the cool thing to do these days, so thanks for letting me be a part of it. Now, get out there and shake it up, kiddo.

    Frivolous Friday

    I want to take a moment to apologize for the lack of blog updates. Shuffling between house/hotel/job1/job2/school/ryan's leaves little time for writing and somehow, I've been without my camera too. (That my friends, is torture.) Next week should find me at home (with a new bedroom.. more about that to come) and back to regularly posting. But, despite the lack of fabulous photos taken by me (haha.. fabulous, right - please note, all product photos shown below were taken by their creators!) and the lack of time to write and quite frankly, not much to say - here I am. So, it's a frivolous Friday filled with the fabulous things I've found thinking, planning, day-dreaming, browsing the internet and rummaging through thrift stores this week. (Besides, it's April Fools Day - I couldn't possibly be too serious.)

    There is one thing I am being serious about today, and everyday, is cancer. AbolishCancer is promoting that #CancersNoJoke today, on a day known for comedy. The goal is to remind you that its not a huge charitable donation that matters. If one person donates $1 million or 1 million people donate $1 - cancer is still being beat. Donate $1 to your favorite cancer charity today.


    If you are looking for a laugh this April Fool's day though, check out the tweets from the missing (well, now found) Bronx Zoo Cobra. Maybe I need to get out more but I've been laughing for days.

    If you are anything like me, lists are a helpful way-of-love. Color-coded ones are better (thank you, Sharpie for so many beautifully colored highlighters). Agendas, post-it notes and white boards organize my days/weeks/months (sometimes even hours) but I've fallen in love with this inspiring little chalkboard. It makes a to-do list seem like a good thing. I'm debating taking a swing at trying to make my own but if you're like me and need one of these ASAP, they're available on etsy.

    Plus, I was looking for some more green accents for my bedroom anyway.
    
    Speaking of accenting my bedroom. Yesterday was spent rummaging through used furniture for chairs for my bedroom. I scored two little oak beauties - only problem is, someone had a dog with a thing for chewing the furniture. I'm working on a little project to take these chairs from a thrift store find to something chic & fun. If it goes well, I'll run you through the little project next week.


    And while I'm at it, I'm going to attempt this yellow songbird tutorial, too. A too-cute way to display earrings and headbands, plus a bonus for my incessant love of all things crafty.

    Other things I'm loving today?

    Rosettes and Ruffles. Maybe I have a thing for the name (Jennifer Rose, ahem) but lately, I've fallen for anything with these little fabric flowers or shimmery fabrics. Headbands above all - not that I need anymore of those.


    The pearl accented centers and soft colors of these rosettes are to die for. They also add a much needed spring boost to any outfit. Even better, Cotton Lane creates lots of handmade products that are also eco-friendly, a very important bonus with Earth Day just around the corner! Buy yourself one to celebrate? Also, do I need to mention that "ballerina" is part of the name? 
     

    I'm head over heels for these headbands made by just.lovely.things and to tell you the truth, her blog is just lovely too. These will make the perfect spring accessory and her packaging will brighten your day when you receive your new headband in the mail.

    I will be hosting my first food allergy awareness event in two short weeks! Or rather, be part of an event. For those of you who aren't part of the Penn State York community, we have one special event each year that (surprisngly) a lot of students attend - Unity Day. (Part of Unity Week) The goal is to celebrate and spread awareness about the diversity on our campus. But to most students it's known for a fabulous schmorgas board of diverse foods. This year, allergy-friendly foods will be featured too! Brought to you by well, me! and Udi's Gluten Free Foods! So, plan on stopping by on April 14th for some yummy, free, and allergy-friendly food!

    Despite my anguish that Death Cab for Cutie tickets sold out for the East Coast in minutes, I'm loving their new single. You are a Tourist. Their new album comes out this May and I've already preordered it. If there's a band I can't get enough of, it's this one. Listen and fall in love:
